Raw quinces might hard to cut from the tree and tart in taste, but their taste transforms when turned into marmalade and, of course, in sweet preserve.
The traditional sweet quince preserve has a characteristic crunchy texture due to the added walnuts which, in combination with the pelargonium and the honey take the flavor off.
